Yellow Gazpacho
Summer brings lots of fresh produce and garden tomatoes of several varieties. This gazpacho can be made from any tomato, but by choosing yellow you get more iron, pottasium, and zinc.
Ingredients:
8 yellow tomatoes |
1 large yellow cucumber (green is okay if yellow is not available) |
1 shallot, diced |
2 garlic cloves,minced |
tsp.of salt |
1 tsp. of red pepper flakes |
olive oil to drizzle per serving only |
Fresh herbs (oregano, rosemary, and thyme) for garnish |
1/4 cup of greek yogurt |
4 green onions, diced (ends removed) |
1 tbsp. of sherry vinegar |
Instructions:
1 | Place all ingredients except olive oil, fresh herbs, and yogurt into a blender or food processor. Puree until smooth. Pour into bowls to serve. |
2 | Serve with a tsp. of greek yogurt, a sprinkle of fresh herbs, and a light drizzle of olive oil. |
