Vegetarian Spicy Pecan Dirty Rice
This vegetarian version of dirty rice is great with your favorite steamed veggies.
Ingredients:
4 tbsp. vegetable oil
|
1 tbsp. chopped spicy pecans (toasted pecans, 1 tsp. vegetable oil, cayenne, black pepper/pecans mixed before hand)

1 red onion, diced
|
1/2 cup of mushrooms diced
|
1 red bell pepper chopped |
2 garlic cloves, minced
|
1 tsp. dry basil
|
1 tsp. dry oregano
|
1 tsp. ancho chili powder
|
1 tsp. paprika
|
1/2 tsp. crushed red pepper
|
2 cups rice (white or brown)
|
1- 16 oz.can no salt vegetable broth
|
1 tsp of salt and pepper |
1 bundle of parsley for garnish |
Instructions:
1 | Set oven to 400 degrees and toast your pecans with the oil and spices (see ingredient list) on a cookie sheet. 10 minutes. Remove from heat and set aside. |
2 | Set a deep pot or pan to high, add vegetable oil in pan. Sauté onion, garlic until translucent. Add basil, oregano, chili powder, paprika, red pepper and rice. Sauté rice for three minutes, stirring occasionally. Add broth and water. Bring to a boil then reduce to a simmer. Once liquid has absorbed into the rice/veggies serve in bowls garnished with toasted spicy pecans and parsley. |
