Turkey Ragu with Pasta and Salad
A great way to utilize ground turkey in a simple, wholesome meal.
Ingredients:
1 lb. of ground turkey |
2 crushed/minced garlic cloves |
1 can of 13oz. tomato paste or sauce |
1-2 cups of vegetable broth or water |
Half an onion chopped |
1 package of pasta cooked per instructions |
Salt & Black Pepper to taste |
2-3 tbsp. of olive oil |
Salad: |
2-3 cups of spinach |
Choice of tomatoes, veggies, or fresh fruit |
Low fat dressing |
Grated pecorino cheese |
1/2 cup of red wine |
1 tsp. of Italian spices |
1 tsb. of minced basil leaves |
2 cups of chopped tomato. |
Instructions:
1 | Heat a large saucepan on medium heat. Add onions and garlic, cook until translucent. |
2 | Add turkey till browned (15 mins.) Add all other spices and vegetables. Scrape bottom of pan and cook till tomatoes release juices (10 mins.) |
3 | Add tomato paste/sauce. Bring to a boil. |
4 | Add wine and stir in. Lower heat to simmer and add a lid for ten mins. |
5 | Serve hot with cooked pasta, cheese, and salad. |
