Turkey and Veggie Stuffed Red Cabbage Leaves
Easy recipe that is fast, low in calorie and fresh with spring flavor!
Ingredients:
6 red cabbage leaves
|
6 slices of roasted turkey (deli sliced will work)
|
1/2 cucumber, sliced
|
1/2 tomato diced |
1 small carrot chopped |
1/4 cup of hummus
|
1 tsp. of paprika or cajun seasonings |
1 half of an avocado (diced) |
Fresh spring herbs (minced--parsley, chevril, marjoram, basil, thyme, sage, etc.) |
Instructions:
1 | Fill each red cabbage leaf with a slice of turkey, cucumber, hummus and seasoning.

Add any other spring vegetable you desire.
