Turkey and Veggie Stuffed Red Cabbage Leaves

Easy recipe that is fast, low in calorie and fresh with spring flavor!

Ingredients:

6 red cabbage leaves
6 slices of roasted turkey (deli sliced will work)
1/2 cucumber, sliced
1/2 tomato diced
1 small carrot chopped
1/4 cup of hummus
1 tsp. of paprika or cajun seasonings
1 half of an avocado (diced)
Fresh spring herbs (minced--parsley, chevril, marjoram, basil, thyme, sage, etc.)

Instructions:

1Fill each red cabbage leaf with a slice of turkey, cucumber, hummus and seasoning.
2Serve chilled.

Cook's Tips:

Add any other spring vegetable you desire.
