Tuna Roll

Ingredients:

Flour tortillas are filled with tuna garden salad and rolled up for a simple but fancy sandwich.

4 whole wheat flour tortillas
4 cups shredded dark green lettuce
4 tablespoons nonfat salad dressing
6-ounce can albacore water-packed tuna fish, drained
1 cup diced ripe tomato
1/2 cup diced cucumber
1/4 cup sliced green onion
1/4 cup nonfat plain yogurt
1 teaspoon capers or relish

Place tuna, tomato, cucumber, green onion, plain yogurt and capers (or relish) into medium-sized mixing bowl and mix together well. Toss 4 cups lettuce with nonfat salad dressing and divide between 4 dinner plates. Warm flour tortillas slightly in microwave or toaster oven (take care not to make them hot which would dry them out) and roll each one with a quarter of the tuna salad. Cut the tuna roll in half diagonally and place next to lettuce. Serve with baked potato chips.
