Tomato Corn Salad
Ingredients:
4 ears fresh corn, husked, steamed and chilled

1 tablespoon olive oil
|
1 tablespoon red wine vinegar
|
3 medium tomatoes, chopped
|
1 tablespoon grated Parmesan cheese
|
1 tablespoon chopped fresh parsley |
Instructions:
1 | Cut kernels off cobs. Mix ingredients in medium-sized mixing bowl. Chill until ready to serve. Serve salad on top of lettuce or in colorful bowl. |
