Tofu and Watermelon Radish Salad
Meatless, but wonderful to eat. Lunch or dinner is served in 15 minutes.
Ingredients:
1 cup of cubed/diced tofu |
1 head of romaine or butterleaf lettuce |
1 medium watermelon radish, sliced thin and cut into half moons |
1 green onion chopped |
1 grated small carrot |
1/2 cucumber sliced thin |
1 tomato diced |
1/2 tbsp. of sesame seeds (or other non-salted nuts) |
dressing: 1 lemon juiced, 2 tbsp. of avocado oil, 1/2 tsp. of salt, fresh ground pepper to taste, minced dill, 1 garlic clove crushed, and tsp. of tahini. Add a little cold water if needed to keep from becoming too thick. |
Instructions:
1 | Make your dressing first and set aside to marinate in a small mixing bowl. |
2 | Prepare and chop/slice/dice all ingredient. Mix in a large salad bowl and toss with 1 cup of tofu. Serve two chilled salad bowls and drizzle 1 tbsp. of dressing on each bowl or serve in a small dipping container on the side. |
