Sweet Potato Pie

Satisfy your sweet tooth with this rich pie. 

Ingredients:

3 sweet potatoes (approximately 2 1/2 lbs.)
4 c. water
1 stick (1/2 c.) butter
1/3 c. sugar
2 Tbsp. flour
3 eggs, large (remove from refrigerator 30 min. before use)
1/2 c. 1% milk
1 tsp. nutmeg, grated
1 1/2 tsp. cinnamon, ground
1 pie crust (10 in. diameter), unbaked, deep dish (homemade or purchased)

Instructions:

1Peel sweet potatoes; cut into 1 in. chunks. Bring to a boil in water in covered 3 qt. saucepan. Reduce heat and cook until tender, about 20 min. Drain and discard water.
2Place sweet potatoes in large mixing bowl and beat with electric mixer on high until smoothly mashed. (You should get about 3 c. of sweet potatoes.)
3Cut butter into several small pieces. Add butter pieces to potatoes and beat until thoroughly blended into potatoes.
4In small bowl, whisk together sugar and flour; add to potatoes, beating until blended.
5Add eggs, milk, nutmeg and cinnamon, beating until blended. (Mixture will be thick.)
6Spoon into prepared pie crust and bake in a 350°F oven for about 1 hr. and 15 min. or until center of pie is firm. Remove pie to cooling rack. Cool for at least 15 min. before serving.
