Sweet Potato Ginger Soup
This recipe has only four ingredients. You can have it for lunch with a side salad or a veggie wrap.
Ingredients:
3 large sweet potatoes, peeled and diced (8 ounces each) |
3 cups filtered water |
2 ounces ginger, grated and juiced (about 2 tablespoons) |
1 teaspoon low-sodium salt |
Instructions:
1 | In a medium pot over medium heat, add the sweet potatoes, water, ginger juice, and salt. Cook until sweet potatoes are tender. |
2 | Working in batches, transfer potatoes and cooking water to a blender or food processor and process to a smooth consistency. |
