Strawberry Feta Toasts with Soup or Salad

These toasts are great to eat with a big salad or a bowl of your favorite savory soup. Mix up the herbs and add diced cucumbers for an even more powerful punch of flavor. 

Ingredients:

2-3 tbsp. extra-virgin olive oil, divided
2 tbsp. freshly squeezed lime juice
1 jalapeño (remove seeds and stem)
2 teaspoons agave nectar or honey
6 ounces strawberries, hulled, sliced thin (lengthwise)
1 4-8 oz. block / package of feta cheese, sliced into 1/2 inch wide rectangles (lengthwise)
2 tbsp. chopped fresh mint
2 tbsp. chopped fresh lemony thyme leaves
Ground black pepper
4-6 slices of whole grain or gluten free artisan bread (loaf)
Serve with: Your favorite salad or soup

Instructions:

1The dressing: whisk 2 tbsp. oil, lime juice, agave/honey, jalapeño and pepper to taste. Gently marinate/mix with strawberries. Let it sit for 10 mins.
2Heat a skillet medium-high heat and add 1 tbsp. olive oil. When hot, add feta cheese. Cook cheese for 2-3 minutes per side without disturbing, until brown corners appear on the edges of the cheese.
3Remove cheese from skillet and place on toasted bread slices. Layer straw- berry mixture over cheese. Top with mint and lemony leaves and serve while warm with your favorite soup or salad. Makes a great light meal.
