Stir Fried Bok Choy

Bok choy is a wonderful cabbage-like-vegetable that is wonderful with seasonings. You can substitute bok choy with cabbage.

Ingredients:

1lb. bok choy
Sauce: 1 tbsp. soy sauce, 1 tbsp. of mirin, 1/2 tsp. sugar, 1 tbsp. peanut oil, 1 crushed garlic clove, 1 oz, fresh ginger grated, and 1 tsp. of sesame oil
1 tbsp. of peanut oil for cooking
Sesame seeds

Instructions:

1Remove ends of bok choy. Separate the leaves, rinse well, and dry with paper towels.
2In a small mixing bowl mix the sauce
3Heat a large skillet over medium-high heat. Add oil and swirl to coat the bottom and sides. Add the garlic and ginger and stir-fry until aromatic, 20 to 30 seconds. Add the bok choy and stir-fry for about 2 minutes, until crisp but tender (do not burn.) Add the sauce and cook for 1 minute. Turn off the heat, and drizzle with sesame oil. Serve on plates with your favorite lean protein (chicken, turkey, or tofu.)
4Add sesame seeds to the top of each serving.
