Spinach Shakashuka
These are North African inspired poached eggs with spinach instead of the traditional tomato sauce. A great way to ingest your greens in the morning!
Ingredients:
1 tsp. of salt

3 cups of fresh spinach |
2 green bell peppers minced
|
2 cups of chopped tomatoes and carrots |
1 tsp cumin
|
1/4 cup of olive oil
|
1 large onion, chopped
|
Freshly ground black pepper
|
4 large eggs
|
Harissa powder or paprika for sprinkling on top |
1/4 cup of celery leaves minced |
Instructions:
1 | Heat large skillet (with a lid) on medium heat. |
2 | Add oil, onions, bell peppers, chopped tomatoes, carrots and all the spices |
3 | Add rest of ingredients except the eggs. Let everything sauté for 15 mins or until soft. Onions should be translucent and spinach will wilt and release liquid. |
4 | Once mixture is soft, and beginning to boil with liquid add the eggs. Place the lid onto the skillet and turn heat down to low. Poach eggs in veggie sauce/mixture for 7-10 mins (until yolk is at desired softness or hardness.) Remove from heat and turn off burner. |
5 | Sprinkle with celery leaves and Harissa/paprika. Enjoy hot! |
