Soba with Mushrooms, Onions, Cucumber and Apple

Sounds weird, but tastes amazingly fresh and savory. The trick is to leave the cucumber and apple raw as a topping, only cook the other ingredients with the broth and noodles. 

Ingredients:

1 packet of soba noodles (see your Asian food aisle at the grocery store)
3-4 cups of water or vegetable broth (low-sodium)
1 jalapeƱo diced
1 banana pepper diced
1 garlic clove minced
1 tsp. of red pepper flakes
1 tbsp. of honey
1 tbsp. of soy sauce
1 tbsp. of fresh ginger, juiced or crushed for it's liquid
topping: half an apple sliced into thin half moon shapes, half of a small cucumber sliced thin, 1 tsp. of rice vinegar, fresh ground black pepper
Protein: add 1 1/2 cup of your favorite tofu, pork, seafood or chicken.(all meat should be precooked)
1 bundle of green onions, tips and roots removed, chopped

Instructions:

1Heat in a medium pot the water/broth, medium heat. Add diced peppers, soy sauce, mushroom, all the chopped green onions, and garlic. Bring to a boil. Add the soba noodles. 6-8 mins later the noodles will be tender. Add honey. Add your precooked meat. Turn off the heat and remove from the burner. Add tofu, if you are using tofu. Add the ginger juice, let sit for five minutes.
2Add the slicec cucumber and apple with rice vinegar and black pepper.
3Ladle with the the noodle/broth with veggies/spices into bowls. Top with the cucumber and apples. Enjoy with your favorite hot sauce.

This dish is excellent served as a cold noodle dish.
