Simple Gluten-Free Peanut Butter Cookies

Easy to make and delicious. Try these as a ice cream cookie sandwich with vanilla or chocolate ice cream!

Ingredients:

1 cup of peanut butter (smooth works best)
1 cup of sugar
1 large egg
Optional: Sea Salt Flakes

Instructions:

1Set oven to 350 degrees.
2Whisk together all the ingredients (starting with the egg whisking first) or place ingredients all at once in a food processor until a dough forms.
3Using a teaspoon drop dough onto a parchment paper covered cookie baking sheet. Space cookies out about 2 inches apart.
4Place baking sheet in the oven for 10 mins (12 mins is the longest you can go before burning.) Bake until golden brown.
5Remove from oven and sprinkle with 1tsp or more of sea salt flakes. Enjoy!
