No Bake Cashew Cake with Fresh Fruit
No need to use the oven to make this recipe. Can be made in less than 20 minutes and is low in calories and sugar.
Ingredients:
2 cups of cashews grounded
|
1 tbsp.of ghee or coconut oil or even vegetable oil
|
1/2 tsp. of vanilla
|
1 tbsp. of citrus zest
|
1 tsp. of cardamon
|
1 tsp. of cinnamon |
Topping: fresh strawberries, orange segments, sliced nectarines, apple slices, berries, dusting of cocoa or drizzle of unsweetened chocolate. Anything you have available. |
Instructions:
1 | Using a food processor or blender process cashews with all the ingredients (except toppings) until it resembles a soft dough. May require scraping the sides once or twice until thick and smooth. Should not be thing and wet, but thick like a cookie dough or tart crust. |
2 | Take cashew mixture and using a plastic spatula or your fingertips, press it into a tart pan or casserole dish. Make sure the mixture spreads to all sides of the bottom of the dish. |
3 | Slice all stone fruits or other large fruits to a bit size-thin shape. Layer all the thin slices from the edges of the dish towards the center. Reserve the center for berries, orange segment and other uncut, small fruit. |
4 | Serve as is or try dusting cocoa or powder sugar, use your imagination and have fun. |
Cook's Tips:
Serve chilled or at room temperature. Best eaten within the same day made. To keep fruit from browning squeeze one or two lemon wedges (2 tbsp.) over the fruit before assembling.
