Salt Roasted Shrimp with Sweet Orange Dipping Sauce

This meal is elegant and has very little clean up. Prepare with a gazpacho or cold summer soup and you are set! Recipe courtesy of Louisiana Seafood for Life

Ingredients:

1 lb. of Louisiana Shrimp, 16-20 count, (unpeeled and with heads)
2 cups fresh orange juice
2 tbsp. orange zest
1/4 cup sugar substitute
1/3 cup green onion, minced
1 tsp. of hot sauce
1 tbsp. of soy sauce
2 lbs. rock salt (kosher also works)

Instructions:

1Dipping Sauce: Mix orange juice, zest, honey, green onions, TABASCO® and soy sauce. Let it sit to the side while roast the shrimp.
2Salt Bed and Shrimp: Place ½-inch thick layer of salt on sheet pan or ovenproof dish. Place in 475°F oven for 30 minutes. (Salt can be used more than one time.) Carefully remove salt dish from oven, lay shrimp on salt, cover with foil and place back in oven for 5 minutes.
3Remove shrimp from salt with tongs, place on serving plates and serve each with 2 oz. ramekin of Dipping Sauce.

Cook's Tips:

Left over dipping sauce works great with a little vinegar to become a salad dressing.
