Poultry Broth
Ingredients:
1 chicken or turkey carcass, skin removed, cut in pieces
12 cups water
1 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1 bay leaf
1 garlic clove, crushed
dash black pepper
pinch thyme
pinch rosemary

Instructions:
Place all items in a large soup pan or crock pot and bring to a boil. Reduce to a simmer and cook for 1-1/2 hours on low heat (you can double this time in a crock pot if you wish).
Remove the bones and seasonings and chill immediately in a shallow container. Remove the fat that rises and solidifies on top.
Use immediately or freeze in ziplock bags in 1 cup portions up to one year.
This broth is great for soups, rice and pasta dishes.
Cook's Tips:
Cook on low heat to ensure that the broth stays clear. Use a gravy fat skimmer cup to remove more of the fat when done
