Phyllo Meat or Veggie Pie

A yummy, easy to assemble phyllo dough pie will fill you up with less fat and sodium! 

Ingredients:

10-14 sheets of non-dairy phyllo dough (defrosted)
4 tbsp. of olive oil
Filling: 1 lb. of ground turkey or cooked rice, 1 chopped / peeled carrot, 1 tsp. of nutmeg, 3 tbsp. of mint leaves minced, 1 garlic clove minced, 1 tsp. of ground or grated fresh ginger, 1 tsp. of cumin, 1 tbsp. of tomato pureƩ, and 1/2 bag of frozen,pre cut green beans.
1 tbsp. of vegetable oil or olive oil to cook in pan for filling
1 tsp. of salt
Black pepper to taste
Garnish with mint leaves and sliced cherry tomatoes
1/4 cup of shredded cheese (cheddar, mozzarella, or any sem-soft cheese)

Instructions:

1PreHeat your oven to 400 degrees and add a little olive oil to the bottom of a medium sized casserole pan.
2In a large skillet assemble the filling. Once meat filling is cooked (20 mins) and everything else is heated / softened, place mixture into a large bowl to cool while you assemble the the phyllo sheets.
3Assemble your phyllo sheets by criss crossing 2 sets of 4-6 sheets.First set of 4-6 sheets lay horizontal, add a tbps. of olive oil, then the next vertical. Add 2 tbsp. of filling then repeat the steps until you reach the top of the casserole dish and end with a set of phyllo sheets. Add your cheese on top and place in the oven to bake for 10-15 mins. Remove once the cheese is melted and the phyllo dough has light brown edges.
4Serve each piece hot, garnished with cherry tomatoes (sliced) and mint leaves. This dish goes great with a salad or steamed veggies!
