Paleo Pork Stuffing
Drop the carbs with this savory recipe that is low in fat and high in protein. You can eat this alone with a plate of roasted vegetables or use it as your stuffing for your Thanksgiving turkey.
Ingredients:
1/2 tbsp. of coconut oil

1 lb. ground pork
|
1 red onion chopped
|
2 cups Button Mushrooms, chopped
|
1 cup celery rib, diced
|
1 large bell pepper chopped
|
6 garlic cloves, minced
|
2 tbsp. Rosemary, fresh, minced
|
2 tbsp. dried thyme, minced
|
2 tbsp. sage minced
|
1/2 tsp. of salt
|
1 tsp. of black pepper (or more as needed)
|
2 tsp. fennel seed
|
2 tsp. anise seed
|
2 tsp. chili powder
|
1/2 tsp. cayenne |
Optional: 1/2 cup of cranberries (add to the pork mixture before cooking) |
Instructions:
1 | In a large mixing bowl, combine ground pork with all seasonings, using a large spoon or spatula. Let sit to absorb flavor. |
2 | Heat coconut oil in a large skillet on medium heat.

3 | Place bell pepper, mushrooms, and celery into skillet to sauté until soft.

4 | Add pork mixture to skillet, and cook until pork is golden brown on the edges.
|
5 | Remove from heat, and drain any excess oil or grease.

6 | Serve alone or as a side to turkey and the rest of your dinner. |
