Paleo Pineapple Pork Stew

Enjoy a citrusy pork stew with kale leaves. Get Paleo y'all!

Ingredients:

2 tbsp coconut oil
3 lbs pork shoulder
1 large white onion, chopped
1 (13 oz.) can of pineapple, drained
2 large tomatoes chopped
1 cup dry white wine
4 – 5 cups veggie broth
4 – 6 cups of kale

Instructions:

1Heat a large pot on med-high heat. Place pork in oven and brown for two minutes on each side. Remove pork from oven and place on plate, covered.
2Add onion to oven and sauté five minutes. Add pineapple, tomatoes and pork. Pour in wine and broth . Cover, bring to simmer, and let cook for two hours. Remove from heat, let cool completely and refrigerate overnight.
3The next day, place the oven over a medium flame and cook one more hour; pork will easily pull apart with two forks.Shred all pork with two forks and serve on a bed of kale within a soup bowl

Cook's Tips:

To save time, place all ingredients except kale, in a crock pot and slow cook all day while at work.
