Paleo King Cake

King cakes are a Mardi Gras treat that shimmers with bright colors and sugary ingredients. Try this paleo recipe full of nutrients, gluten free,  and less sugar. 

Ingredients:

For the cake:
2 eggs
3 egg whites
1 cup of coconut milk
2 tbsp. vanilla
⅓ cup honey
¾ cup coconut flour
2 tsp.baking powder
½ sp. baking soda
½ tsp. salt
Cashew Glaze:
¼ cup coconut oil, melted
2 tbsp. honey, heated to warm and fluid.
¼ cup coconut cream (from top of a coconut milk can)
¼ cup cashews, soaked in 1/2 cup of water for at least 4 hours, and drained
¼ tsp. salt
Coloring/texture for the glaze:
1½ cups shredded dried coconut
1/4 cup kale and 1/2 cup of water
1 tsp. turmeric powder
3 blueberries and 2 blackberries (for purple)
Non-stick spray

Instructions:

1Cake instructions: Preheat oven to 350 degrees. Combine eggs, coconut milk, honey, and vanilla in a mixer. Combine until frothy with lots of air. In another bowl mix dry ingredients. Add dry ingredients and mix until just combined, do not over mix. Pour cake batter into a bundt cake pan or other circular mold and bake for 40-45 minutes. Cake will be done once golden on top.
2Cake glaze: using a blender or processor puree all ingredients until smooth and thin. Place in a freezer for 10-15 mins until they appear as thick as a syrupy glaze (if it is more the consistency of gravy let it thaw a little bit before pouring over the cooled cake.)
3Color / texture: green – Add kale and ½ cup water to a high speed blender until smooth. Strain through a metal mesh or cheesecloth. Add to 1/4 of the coconut until it changes color to green. Yellow: Add turmeric ½ teaspoon at a time until the coconut is colored. Add a little water if the coconut is too dry (1 - 2 tsp.) Purple: Heat up the berries in a pot on low-medium heat until they give way their juices. Add a pinch of coconut at a time and using a wood spoon color the coconut. Add all your colors to the proper sections of the cake and serve warm or at room temperature.
