Oysters in a Grilled Pouch

Enjoy this oyster dish with friends over the summer holidays (Memorial Day Weekend, Fourth of July, Labor Day Weekend) or anytime you want a quick meal that healthy fresh and away from the hot kitchen. 

Ingredients:

24 oysters, cleaned and scrubbed
1 (13 oz.) can of plum tomatoes (seedless)
1 cup of chopped Italian parsley, oregano, bay leaves, and thyme
1 tsp. of red pepper flakes
3 tablespoons of unsalted butter
1/2 cup of white wine
1 head of garlic
2 cups of steamed rice

Instructions:

1Line up 4ft. of aluminum foil (look for a grade sturdy enough to handle the grill)
2Add oysters into the center and layer the rest of the ingredients on top.
3Seal the aluminum pouch tightly but leave room at the edges (2 inches) or at the top if bunching/sealing like a bag room for the steam to fill.
4Keep the grill on high and add the pouch ( shut the lid of the grill.) Let the oyster pouch cook for 15-18 mins. The steam will open the oyster shells and allow the herbs and other seasonings to flavor the oysters.
5Serve in bowls with the oyster liquid, a few tablespoon of rice, and your favorite crusty multi-grain or whole wheat loaf of fresh bread. Also great with a side salad.

Cook's Tips:

Add fresh lemon or lime slices to each serving as well as your favorite hot sauce.  Most oysters should open from steam, discard any that do that open.
