Nutty Chocolate Covered Banana Bites
There is no additional sugar added to this sweet snack.
Ingredients:
5 large ripe bananas

2 bars of dark chocolate, broken into pieces
|
2 tbs. coconut oil
|
1 oz. of almonds |
1 oz. of shredded coconut
|
Instructions:
1 | Place chocolate and coconut oil in a large glass bowl over a pot of simmering water, the water not touching the bottom of the bowl (double boiler). Let the steam warm the bowl up and begin to melt the chocolate, then stir with a spoon until completely melted. Remove from heat and let it cool a bit. |
2 | Chop and place nuts and coconut flakes into a medium size bowl. |
3 | Layout a sheet of wax paper onto a large baking or cookie sheet next to the bowl of nuts, find a clean working space to begin the process. |
4 | Cut and slice one banana at a time (don't do all the bananas at once or they will brown.) Slice into 1" segments. |
5 | Add each banana segment into the glass bowl of chocolate. Use a fork to toss and cover the segments in chocolate. |
6 | Add the chocolate covered banana segment into the bowl of chopped nuts and coconut. Toss gently then place each segment onto the wax paper to cool and settle. |
7 | Chill the baking sheet with all segments for 30 minutes or longer in a freezer. Serve with toothpicks. This can be quite perishable, any left over pieces can be chilled in the refrigerator and should be eaten within 1 day. |
Cook's Tips:
For nut allergies, you can remove the almonds and use just the coconut or dried fruit (apricots, cherries,apple, etc.)
