Non-Dairy Corn Maque Choux
Maque Choux is a traditional Southern Louisiana creamy dish that works well with rice or by itself as a quick lunch or dinner.
Ingredients:
2 tablespoons vegetable oil

1 onion chopped
|
1 small red bell pepper chopped
|
1 bag of frozen corn kernels (12 oz.)
|
1/2 cup of lite coconut milk
|
1 teaspoon thyme leaves
|
1 teaspoon of minced sage leaves
|
1 teaspoon of your favorite hot sauce
|
2 green onions minced
|
4 tablespoons of minced parsley
|
1 small tomato diced
|
1/2 tablespoon of basil
|
Salt and black pepper to taste

Instructions:
1 | Heat oil in large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add your bell pepper; cook until soft, about 5 minutes. Add corn; cook for 2-3 minutes. Add coconut milk and half of your hot sauce. Then go ahead and add all the other seasonings except parsley and basil. Simmer until thick for 5 mins. Add green onion, parsley, and basil. Serve hot with your steamed rice.

If you want to incorporate some lean protein, try 1/2 cup of black beans or 4 oz. of crab meat/seafood. Nutritional info listed does not display the addition of these two ingredients.
