No Bake Super Food Energy Bites
Full of protein and guaranteed to give you an energy boost without caffeine!
Ingredients:
3/4 cup cocoa

1/2 cup unsweetened coconut flakes
|
1/2 cup pecans
|
1/2 cup raw pumpkin seeds
|
1 1/2 cups pitted dates
|
1/4 cup chia seeds
|
1/2 cup creamy almond butter
|
1 teaspoon ground ginger
|
1 teaspoon ground or unprocessed turmeric root
|
1/4 cup of hot water
|
Pinch of salt |
Instructions:
1 | Pour the cocoa onto a large plate or shallow dish. Set aside.

2 | Process coconut, pecans, and pumpkin seeds in food processor until very coarsely chopped. Dump into a bowl.

3 | In the same processor, pulse dates they resemble a finely chopped mixture. Scrape down sides of bowl, then add chia seeds. While running the food processor, slowly pour the hot water, until a paste forms. Add the almond butter, ginger, turmeric, and salt. Add coconut mixture and pulse until just combined.
Spoon mixture and roll into bite size balls in between palms, then roll in cocoa. Refrigerate for 1 hour or more. |
Cook's Tips:
For extra energy, add a tsp. of spirulina to the first part of the recipe. Also mix it up with other dried fruits.
