Naan French Toast

Who doesn't love pain perdu? French toast makes any breakfast fun, but try a lower calorie recipe that mixes Indian spices with traditional egg custard.


2-4 pieces of Naan (look in the world section of your grocery store or bread aisle)
3 eggs
1 tsp. ground anise
1 tsp. ground cardamom
Yogurt topping: 1/2 cup of non-fact yogurt, 1 tsp. of lime zest, floral essence (rosewater, orange flower water, vanilla or lavender), t sp. of honey
Fresh fruit: berries, figs, orange segments, etc.
One or two sprigs of mint, remove the stem and use the leaves garnish with.


1Cut each piece of naan into 4 quarter pieces. Add eggs and spices to a medium/large bowl. Add pieces of naan to the egg mixture.
2In a small bowl make the yogurt topping and let sit to marinate.
3Heat a griddle, if using a non-stick pan add a little bit of cooking spray or 1 tbsp. of vegetable oil.
4Add four pieces at a time to the griddle/skillet. Cook each side for 5-7 minutes on each side.They will appear golden brown on each side, careful not to burn.
5Place two-three pieces on each plate, spoon a tablespoon of the yogurt topping onto each plate. Garnish with fresh fruit and mint leaves. Enjoy while warm.
