Mullet Fish & Black-eyed Pea Gumbo

Ingredients:
1 lb. cooked mullet meat (smoked, grilled, or broiled) |
2 Tbsp. butter |
1/ 2 c. onion, chopped |
1 c. celery, chopped |
1 clove garlic, minced |
2 Tbsp. flour |
1/ 2 c. white wine |
1 tsp. dried oregano |
1 tsp. dried basil |
1 tsp. dried thyme |
1 tsp. anise seed |
2 tsp. sugar or sugar substitute |
1 fresh jalapeno pepper, seeded and chopped |
2 (15-oz.) cans black-eyed peas, drained |
1(10-oz.) pkg. frozen cut okra, thawed |
2 (20-oz.) cans diced tomatoes, drained |
