Monster Green Avocado Smoothie
A great after school snack for kids and low calorie drink for adults. Avocados are technically a fruit and this fruit is full of nutrients like potassium.
Ingredients:
2 ripe avocados, halved and pitted
(discard the skins and pits but spoon out the flesh) |
2 1/2 cups of almond milk (skim milk is also wonderful to use!)

3 tablespoons fresh lemon juice
|
1 tablespoon brown sugar or sugar substitute
|
4-6 cubes of ice |
1/2 tablespoon of minced mint |
Instructions:
1 | Place all ingredients into the blender and puree until you have incorporated all ingredients into a semi-thick smoothie. |
2 | Poor into chilled glasses and serve with a fresh berry or wedge of fruit (strawberry, cherry, raspberry, blueberry or wedge of orange or bananna will work). |
Cook's Tips:
A good serving size is aroun 4-6 ounces. This is a thick smoothie, add a tad more milk if you need to thin it out.
