Mock Tuna Salad
A great veggie twist on tuna salad served best with toasted multi-grain toast or on a bed of greens.
Ingredients:
1 (13 oz.) can of chickpeas |
1-2 tbsp. of pickle relish |
3tbsp-5 tbsp. of mayonnaise (veganaise also works) |
1 tbsp. of fresh lemon juice |
1/2 tsp. of salt |
Freshly ground black pepper |
1/3 cup of vidalia onion grated |
Romaine lettuce or sprouts |
Optional: toasted multi grain bread slices |
Instructions:
1 | Combine all ingredients into a processor and pureƩ until rough mixture forms where you can still see a few chickpeas but do not over process into a liquid paste. |
2 | Serve on toast or bed greens. |
