Minty Jasmine Rice with Chicken

Easy to assemble. Serve this rice dish over a bed of greens for a healthy lunch or dinner. Recipe courtesy of Asian Flavors Diabetes Cookbook


3 cups Jasmine Brown Rice freshly cooked and warm
12 ounces (about 2 cups) shredded, cooked white or dark meat chicken
1 medium shallot, peeled and minced
12 large fresh mint leaves, freshly torn
Spicy Fish Sauce Dressing


1In a large bowl, mix together the Jasmine Brown Rice, chicken, shallot, and mint leaves.
2Divide among 6 servings, drizzling each with Spicy Fish Sauce Dressing (page 12) to taste (1 to 2 tablespoons is recommended).

Cook's Tips:

Serving size is 1 cup.
