Mediterranean Chicken Salad

Ingredients:

6 cups ready-to-serve romaine lettuce
2 grilled chicken breast halves, cut into strips
2 cups cooked lentils
1 cup chopped cucumber
1 cup chopped ripe tomato
1/4 cup thinly sliced red onion

Lemon dressing:
1 tablespoon olive oil
3 tablespoons fresh-squeezed lemon juice
1 teaspoon chopped mint
1 teaspoon dried oregano
Black pepper to taste

Toss lettuce with dressing ingredients and place on large plate. Top with the rest of the ingredients. Serve immediately. This salad goes great with warmed whole-wheat pita pockets.
