Macadamia Nut Hummus

Paleo recipes are easy, basic fun. Try this simple recipe with your favorite fresh or grilled veggies. Add your favorite herb and spices and this recipe makes a great condiment for fish or poultry.

Ingredients:

1 cup of macadamia nuts soaked overnight in 2 cups of water
2-4 garlic cloves minced
half a lemon, juiced
2 tbsp. of water
1 tsp. of cayenne
2 tablespoons of tahini
1 tsp. of black pepepr
1 tsp. of salt
1 tsp. of fresh thyme. (or any fresh available herb.)

Instructions:

1Soaking for 6-12 hours is key to making this recipes a snap, begin soaking the nuts in water before you head into work or while you sleep at night. Take soaked macadamia nuts and drain/rinse. Puree in blender or processor the nuts and all the ingredients (except herbs.) Scrape into a medium sized bowl. Gently stir in fresh herbs.
2Serve slightly chilled or room temperature. Store remainder in an airtight container for up to five days.
