Low Sugar Banana Bread

Quick, easy, and low in sugar. 

Ingredients:

4 very ripe bananas
1/4 cup of sour cream or non flavored/ non fat yogurt
2 eggs
1 stick of butter
1 tsp. of vanilla
1 cup of stevia, dark coconut sugar, or other sugar substitute
1 2/3 cup of whole wheat flour
1 tsp. of baking powder
1/2 tsp. of baking soda
Pinch of salt

Instructions:

1Preset the oven to 350 degrees.
2Grease a bread baking pan.
3In a medium bowl combine dry ingredients. Set aside.
4In a mixer or using electric beaters mix butter and sugar until smooth and well immersed (5-7 mins on high.)
5Add eggs one at a time to the butter/sugar mixture. Make sure each is well incorporated using your mixture/electric beaters.
6Using a spatula, slowly add the dry ingredients until well mixed. Consistency should be like a wet, thick batter.
7Pour batter into the bread pan and place in oven for 60 mins. Before removing from heat, place a tooth pick or knife into the middle of the load to see if comes out clean. If batter is still wet leave in the oven for 5-10 mins longer. Once set and fully baked, remove from oven and place on a cooling rack for 30 mins before slicing. Wonderful served warm with a little butter.
