Low Sugar Banana Bread
Quick, easy, and low in sugar.
Ingredients:
4 very ripe bananas |
1/4 cup of sour cream or non flavored/ non fat yogurt |
2 eggs |
1 stick of butter |
1 tsp. of vanilla |
1 cup of stevia, dark coconut sugar, or other sugar substitute |
1 2/3 cup of whole wheat flour |
1 tsp. of baking powder |
1/2 tsp. of baking soda |
Pinch of salt |
Instructions:
1 | Preset the oven to 350 degrees. |
2 | Grease a bread baking pan. |
3 | In a medium bowl combine dry ingredients. Set aside. |
4 | In a mixer or using electric beaters mix butter and sugar until smooth and well immersed (5-7 mins on high.) |
5 | Add eggs one at a time to the butter/sugar mixture. Make sure each is well incorporated using your mixture/electric beaters. |
6 | Using a spatula, slowly add the dry ingredients until well mixed. Consistency should be like a wet, thick batter. |
7 | Pour batter into the bread pan and place in oven for 60 mins. Before removing from heat, place a tooth pick or knife into the middle of the load to see if comes out clean. If batter is still wet leave in the oven for 5-10 mins longer. Once set and fully baked, remove from oven and place on a cooling rack for 30 mins before slicing. Wonderful served warm with a little butter. |
