Low-Fat Pumpkin Alfredo with Pasta

Creamy- delicious, but less fat and cholestrol!


1 can of organic pumpkin puree
1 pkg of whole wheat pasta
1/2 cup of culinary coconut milk
1-1 1/2 cups of half and half
1 cup of grated Parmesan cheese
Salt/black pepper to taste
1 tsp. of grated nutmeg
2-4 minced garlic cloves
Spinach leaves (1/2 cup per serving)
1/4 cup of olive oil


1Heat a large saucepan at med-low heat. Add olive oil, salt/pepper, and minced garlic.
2Add pumpkin, half and half, and coconut milk. Mix gently with a whisk or wooden spoon. Let simmer on low.
3Cook pasta in boiling pot of water per package instructions. Drain in colander and rinse with cold water. Add pasta to sauce pan and cover.
4Add grated cheese to pasta and sauce (mix) then serve in bowls/plates with spinach leaves.
