Low-Fat Pumpkin Alfredo with Pasta
Creamy- delicious, but less fat and cholestrol!
Ingredients:
1 can of organic pumpkin puree |
1 pkg of whole wheat pasta |
1/2 cup of culinary coconut milk |
1-1 1/2 cups of half and half |
1 cup of grated Parmesan cheese |
Salt/black pepper to taste |
1 tsp. of grated nutmeg |
2-4 minced garlic cloves |
Spinach leaves (1/2 cup per serving) |
1/4 cup of olive oil |
Instructions:
1 | Heat a large saucepan at med-low heat. Add olive oil, salt/pepper, and minced garlic. |
2 | Add pumpkin, half and half, and coconut milk. Mix gently with a whisk or wooden spoon. Let simmer on low. |
3 | Cook pasta in boiling pot of water per package instructions. Drain in colander and rinse with cold water. Add pasta to sauce pan and cover. |
4 | Add grated cheese to pasta and sauce (mix) then serve in bowls/plates with spinach leaves. |
