Low-Fat King Cake Scones

These scones are made with a similar king cake texture but without a lot of dairy and butter. Feel free to make them vegan by omitting the Greek yogurt and buttermilk and replacing each with your favorite non-dairy yogurt and use a little lemon juice mixed with your favorite non-dairy milk to make vegan buttermilk. 

Ingredients:

2 ¼ cups all-purpose flour
3 tablespoons sugar
2 ½ tsp. baking powder
1 tsp.salt
4 tbsp. chilled olive oil
6 tbsp. of coconut cream (from can of coconut milk, only the thick top layer)
½ cup low fat Greek yogurt
¾ cup whole buttermilk, divided
1 teaspoon vanilla extract
Buttermilk Glaze: 1 cup confectioners’ sugar and 2 - 4 tbsp. buttermilk Purple, yellow, and green decorative sugars

Instructions:

1Preheat oven to 350°. Line a baking stone or baking sheet(square or round) with parchment paper.
2In a mixing bowl, combine flour, sugar, baking powder, and salt. Add chilled olive oil and coconut cream into flour mixture until the mixture becomes coarse
3In another bowl, whisk together yogurt, 1/2 cup buttermilk, and extracts. Add mixture to flour mixture. Quickly and gently, bring mixture together with mixer paddle on slow until a sticky dough forms. Turn dough onto floured work surface. Knead gently 3-5 turns. Roll dough into a circle 1-inch thick. Cut wedges from dough and place on baking sheet.
4Brush scones with remaining buttermilk.
5Bake 25 minutes. Let cool completely on pan. Drizzle with buttermilk glaze and sprinkle with decorated sugars before glaze cools.
