Louisiana Shrimp with Dill-Herb Orzo
Bring the taste of local shrimp to a light pasta dinner within 30 minutes or less.
Ingredients:
1-1.5 lbs. Jumbo Louisiana Shrimp (25 shrimp, peeled/deveined

1 cup, Orzo (cook per pkg. instructions)
|
½ cup Extra-virgin olive oil
|
2 Tbsp. Basil, freshly chopped
|
2 tbsp.Dill, freshly chopped
|
2 tbsp. Thyme, freshly chopped
|
2 tbsp. Flat leaf parsley |
¾ cup Lemon juice
|
1 tbsp. Lemon zest
|
¾ cup Clam juice
|
Instructions:
1 | Cook orzo per instructions on package. Once cooked mix well with bill and fresh herbs. Place in a large bowl to the side while making sauce and shrimp. |
2 | Shrimp and Sauce:
In medium-large sauté pan, heat olive oil; add herbs and shrimp; cook for 1 minute.
Add lemon juice and clam juice and cook until shrimp is cooked through, 2-3 minutes.
Add lemon zest and remove from heat.
Add ¼ cup cooked orzo in center of each plate/bowl; spoon shrimp and sauce around orzo.
Garnish each serving with fresh parsley. |
