Louisiana Shrimp with Dill-Herb Orzo

Bring the taste of local shrimp to a light pasta dinner within 30 minutes or less. 

Ingredients:

1-1.5 lbs. Jumbo Louisiana Shrimp (25 shrimp, peeled/deveined
1 cup, Orzo (cook per pkg. instructions)
½ cup Extra-virgin olive oil
2 Tbsp. Basil, freshly chopped
2 tbsp.Dill, freshly chopped
2 tbsp. Thyme, freshly chopped
2 tbsp. Flat leaf parsley
¾ cup Lemon juice
1 tbsp. Lemon zest
¾ cup Clam juice

Instructions:

1Cook orzo per instructions on package. Once cooked mix well with bill and fresh herbs. Place in a large bowl to the side while making sauce and shrimp.
2Shrimp and Sauce: In medium-large sauté pan, heat olive oil; add herbs and shrimp; cook for 1 minute. Add lemon juice and clam juice and cook until shrimp is cooked through, 2-3 minutes. Add lemon zest and remove from heat. Add ¼ cup cooked orzo in center of each plate/bowl; spoon shrimp and sauce around orzo. Garnish each serving with fresh parsley.
