Leblebi (Tunisian Chickpea Soup)
Leblebi is a Tunisian chickpea soup that is often served for breakfast but makes an amazing meal anytime of the day. Chickpeas are high in fiber, low in cholestrol, and filling.
Ingredients:
1 1/2 cups of chickpeas (canned or pre-cooked) |
4 cups of vegetable broth |
1 tsp. of ginger (ground or fresh grated) |
1 tsp. of ground cumin |
1/2 cup of diced carrots |
1 tbsp. of harissa |
2 tbsp. of lemon juice (1 large lemon juiced) |
1 large onion diced |
2 green onion (green part included) diced |
1 tbsp. of olive or vegetable oil |
1/2 tsp. of salt |
Ground black pepper to taste |
White turnips diced |
4-6 minced cloves of garlic |
Topping to add with serving: hard boil eggs (sliced thin or crumbled), tuna fish, chopped bell peppers, preserved lemons, tomatoes, parsley, spinach leaves, and chopped green onions |
Instructions:
1 | Add olive oil or vegetable to a large dutch oven or pot. Heat at medium-high. Once hot add onion. Once translucent add carrots, garlic, and turnips. Sauté for ten minutes. |
2 | Add chickpeas, harissa and all other spices. Sauté and mix well for five minutes. Add broth. Bring to a simmer for 20 minutes. Add green onions and lemon juice. Turn off heat. |
3 | Serve with your favorite toppings. |
