Lazy Lentil Vegetable Soup
Ingredients:
1 cup dry lentils
2 cups Healthy Request V8
2 cups water
2 cups frozen mixed vegetables
2 cups Healthy Request V8
2 cups water
2 cups frozen mixed vegetables
Instructions:
Place lentils, juice and water in a large Dutch oven (4 quart) over medium-high heat and cook until the lentils are soft, about 35-45 minutes. Add the frozen mixed veggies the last 5 minutes of cooking so they can heat thoroughly and be tender, but not overcooked.
