Holiday Spinach Salad

This salad is colorful enough to be a holiday table centerpiece.

Ingredients:

8 cups ready-to-serve fresh spinach leaves
1/2 cup dried cranberries and or sliced figs
1 cup sliced pears
1 lemon, juice
1/4 cup minced red onion
1/4 cup chopped pistachios (or almonds)
2 tablespoons cider vinegar
1 tablespoon olive oil
Black pepper to taste

Instructions:

Place spinach leaves in large decorative salad bowl. Sprinkle with cranberries. Slice pears and coat with lemon juice and then place them on top of the spinach. Sprinkle with minced red onion. Cover and chill until service time. Roast the pistachios until crunchy in the oven or toaster oven (be careful not to burn!). Sprinkle them on top of the salad along with the vinegar, oil and pepper. Toss and serve immediately. This salad can be made ahead of time up to one day before as long as you do not put the vinegar and oil on it. That should be done at the last minute.

Cook's Tips:

You can also add colorful baby greens to this salad for more color.
