Holiday Fruit Saute
Ingredients:
1-2 teaspoons trans fat free margarine
2 teaspoons Splenda or brown sugar substitute
1/2 teaspoon cinnamon
1 tablespoon fat-free whipped topping
sprig of mint
Remove the seeds and cut the bigger apples, peaches, pears, nectarines and apricots into quarters. Leave the strawberries and other berries whole and set aside to add fresh just before serving.
Melt trans fat free margarine in a big pan. Add Splenda or brown sugar substitute and cinnamon. Melt over low heat. Add the firmer fruits like apples, peaches, pears and apricots to the margarine mixture. Simmer gently in the syrup for a few minutes. Add a good splash of white balsamic vinegar or lemon juice. Stir over the heat for a few minutes. Pour into serving bowls and serve while warm. Serve with fat free whipped topping. Garnish with sprig of mint.
