Haunted Zucchini Pasta
Ghostly surprises await children brave enough to eat their vegetables!!! (MUAAAAAAAHHH!) This zucchini pesto dish will have them howling at the moon.
Ingredients:
1 pkg of pasta cooked per instructions |
For the pesto:
3 cups packed with basil, spinach or arugula,
3 tbsp pine nuts (optional if there is a nut allergy),
1 small garlic clove minced,
salt and pepper to taste,
1/3 cup olive oil, 1 lemon juiced

1 large zucchini cut into thin strips,
For the eyes: 3 medium-sized mozzarella balls, halved,
3 jumbo black olives |
8 slices of roasted red peppers for tongues |
Instructions:
1 | Cook pasta per instructions, set aside to cool while you prepare the rest of the recipe. |
2 | In a food processor or blender add all ingredients for the pesto.
Pour the pesto over the zucchini noodles and mix to combine. Plate the pesto noodles into a bowl. |
3 | Make your eyeballs by slicing two mozzarella balls in half. Take the jumbo black olives, slice each in half and place on top of the mozzarella for the pupils. Do this for all the plates to be served. |
4 | Garnish with a roasted red pepper slice. |
