Grilled Turkey Breast with pepper sauce and mint

A fun mix of spicy and cool seasoning make this grilled dish an easy, tasty meal for the family. Serve with grilled veggies and you are set for dinner or lunch. 

Ingredients:

5 lb. whole turkey breast
Pepper sauce: puree 1 small cayenne pepper, 1 small hot pepper, 1 creole tomato,1 tsp. of fresh thyme leaves, 1 tsp. of rosemary,1 tsp. of honey / sugar substitute, with 1 tbsp. of vegetable oil (add a little water if too thick)
1 tsp. of salt
1 tsp. of black pepper
Reserve mint sprigs for garnish
Broth: 1 cup of chicken broth, half a chopped onion, 1 tsp. of honey, 1 bundle of fresh mint minced

Instructions:

1Set grill on high (350 degrees) and oil/ prepare grate for turkey breast.
2Mix pepper puree by placing all ingredients in a blender or processor. Place turkey breast on a sheet of aluminum, make a few light slices into the meat with a sharp knife. While using gloves or a brush cover turkey breast on all sides with puree. Make sure to saturate slices made earlier to help the meat absorb the pepper. Let rest for 15 minutes before placing on the grill.
3Place on grill flipping every 15 minutes.
4On medium-high heat the broth. Add all ingredients except the mint. Let simmer but do not boil. Wait till onion is translucent. 10-15 minutes. Once onion is translucent, turn heat off remove from burner and add minced leaves to infuse.
5Once turkey breast is cooked (final temp. will be 160 degrees on a meat thermometer.) Take off the grill and let rest for 10 minutes. Slice and serve with two spoonfuls of broth and place mint sprig on plate for garnish. Serve hot with veggies!.
