Grilled Rib Eye with Grilled Broccoli, Green Beans and Brussels Sprouts

You will need a grilling basket for the veggies, but get ready to sink you teeth into delicious rib eye. 


4 rib eye steaks (12 oz-1lb.), 1 inch thick or more
1 tsp. salt for pre-seasoning
Black pepper
1 lb of green beans, trimmed
1 lb of broccoli, sliced long ways including stalk
1 lb. of Brussels sprouts.
1/4 cup of oil and 1 tbsp. for additional brushing
1 lemon juiced
Seasoning: dried sage, thyme, and rosemary


1Wash all vegetables and remove all damaged / wilted leaves on Brussels sprouts. Place them in large bowl with 1/4 cup of olive oil, use fingers to cover vegetables.
2Salt and pepper each side of your rib eye steak and let meat come to room temperature (45mins.) Go ahead and add your seasoning with black pepper as well at the time of salting.
3Heat up your grill on high
4Once grill is ready place veggies in a grilling basket or small grated section of the grill and in another section place the steaks onto the grill.
5Using tongs move veggies around every 3 minutes to keep from sticking but allow a good char to appear on the tips and striping on the flesh of the vegetables.
6Let your steaks sit on each side 6-8 minutes each or per side or until grilled to your degree of wellness. Brush your steaks with the reserve oil per side. Your level of wellness can read by touch and temperature. Medium rare is 145°F. Medium well is 160°F (71°C). With touch: very rare meat offers little resistance, medium rare will a little springy, medium well is firm and springy, and well-done steak will feel firm. Always let your meat rest for 5-10 minutes before serving.
7Serve hot with your grilled veggies.

If you can purchase grass fed beef ribeye, the flavor will be richer and fit the requirement of the Paleo diet.
