Goji Berry Oats and Quinoa
A warm and delicious bowl of oats with goji berries.
Ingredients:
1/2 cup dried goji berries, cranberries, and any other dried fruit
|
1/2 cup steel-cut oats
|
1/2 cup well-rinsed quinoa
|
1/4 cup raisins
|
1/2 tsp. kosher salt
|
1/2 tsp. ground cinnamon
|
1/4 tsp. ground cardamom
|
Maple syrup
|
Skim milk, coconut milk, or almond milk
|
Toasted walnuts |
Instructions:
1 | Bring the following to a boil: berries, steel-cut oats, well-rinsed quinoa, raisins, kosher salt, ground cinnamon, ground cardamom, and 4 cups water within a medium sauce pan. Reduce heat and simmer, stirring occasionally, until grains are tender, 20-25 minutes. |
2 | Serve with milk, maple syrup and and toasted walnuts.
