Gluten Free Yum Yum Cookie

Gluten free cookie that is perfect little ones and big ones to enjoy. Perfect for an after school snack. 


3 large, over ripe bananas, mashed (1 1/2 cups)
1 tsp. vanilla extract
1/4 cup olive oil, (leave oil in the freezer for 30mins or less until thick but still liquid)
2 cups rolled oats
1/3 cup quinoa flour (or other gluten free flour)
1/2 cup pecan meal (finely chopped pecans using a processor to make a nut meal/flour)
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1 teaspoon baking powder
4- 6 oz. dark chocolate bar chopped


1Preheat oven to 350 degrees.
2In a mixing bowl combine bananas, vanilla extract, and olive oil. Set aside. In another bowl whisk together the oats, almond meal, shredded coconut, cinnamon, salt, and baking powder. Add the dry ingredients to the wet ingredients and and combine quickly-do not over mix. Gently fold in the chocolate chunks.
3Drop 1/2 tbsp. of the dough, an inch apart, onto a parchment lined cookie sheet. Bake for 12 - 15 minutes.
