Gluten Free Banana Meyer Lemon Pancakes
This recipe is gluten free. Meyer lemons are a local Louisiana citrus available in spring. These delicious pancakes will make any breakfast a special one!
Ingredients:
2 small bananas

3 eggs
|
⅓ tsp. baking powder
|
¾ cup almond meal or ground almonds (using a coffee grinder or blender, but be careful to not over blend and make almond butter)
NOTE: if you have a nut allergy, substitute almond meal with a gluten and nut free flour. |
½ cup shredded coconut, unsweetened
|
1 tbsp. Meyer lemon zest
|
Maple syrup |
Instructions:
1 | Mix the eggs and bananas in your food processor, batter will appear fluffy.

2 | Add the coconut, almond meal, lemon zest and baking powder, mix well but let batter rest for 5-7 mins.

3 | Use a griddle or frying pan with non-stick spray. |
4 | Ladle 1/4 cup of batter onto the griddle. Cook until bubbles form on one side and flip. Both sides should be a golden brown. |
