Fruit Avocado Chicken Salad

A refreshing salad full of cool fruit, avocado, and protein. 


2 chicken breasts, cooked and shredded
1 head of romaine or butterleaf lettuce, washed, chopped and core removed
1 tsp. of ground chipolte pepper
1 tsp. of cumin
1 tsp. of fresh groung black pepper
1 cup of fresh cut fruit: mango, papaya, orange, grapefruit or melon
1 ripe avocado diced
2 tbsp. of diced red onion


1Cook chicken on the stove within a skillet and a little water for 20 minutes until fully cooked and no pink. You can also grill your chicken on high, 3-5 minutes on each side until chicken is cooked at 165 degrees (no pink.) Remove chicken from heat, let cool for ten minutes and then shred with two forks.
2Add chicken while still warm to a big salad bowl. Add lettuce, spices, fruit, and avocado. Mix with salad tongs till incorporated. Serve.

Cook's Tips:

You can use tofu instead of chicken if you want to make it vegetarian.
