Yogurt with Roasted Strawberries and Basil

Spring and early summer is perfect for fresh herbs and fruits to embellish your favorite desserts. Great dessert for everyone or a little fruity compote to add to your child’s yogurt snack. 

Ingredients:

1 pint of strawberries, hulled and cut in half
2 tbsp. of sugar or sugar substitute
1 tsp. of lemon zest
4-8 basil leaves
1 container (16 oz. -1 quart) of your favorite low-fat yogurt or frozen vanilla yogurt.

Instructions:

1Toss strawberries with sugar (or sugar substitute) then roast in the oven at 375 degrees for 25 minutes (until juices are released)
2Let strawberries cool for 15 mins. or until lukewarm/room temperature.
3Place all ingredients in a blender and puree. Add 1 tablespoon of mixture to 1 cup of plain yogurt or frozen yogurt and enjoy!

Cook's Tips:

This recipe can be recreated with blackberries, raspberries, or blueberries.
