Yogurt with Roasted Strawberries and Basil
Spring and early summer is perfect for fresh herbs and fruits to embellish your favorite desserts. Great dessert for everyone or a little fruity compote to add to your child’s yogurt snack.
Ingredients:
1 pint of strawberries, hulled and cut in half

2 tbsp. of sugar or sugar substitute
|
1 tsp. of lemon zest
|
4-8 basil leaves
|
1 container (16 oz. -1 quart) of your favorite low-fat yogurt or frozen vanilla yogurt.

Instructions:
1 | Toss strawberries with sugar (or sugar substitute) then roast in the oven at 375 degrees for 25 minutes (until juices are released)

2 | Let strawberries cool for 15 mins. or until lukewarm/room temperature. |
3 | Place all ingredients in a blender and puree. Add 1 tablespoon of mixture to 1 cup of plain yogurt or frozen yogurt and enjoy! |
