Fried Egg and Brussels Sprout Hash
Get a boost of veggies with this wonderful egg-tastic meal that hits the spot for breakfast, brunch or dinner.
Ingredients:
2 eggs fried over easy |
1 tbsp. of butter (for frying) |
2 garlic cloves, minced |
1 small carrot, diced |
4 cups of Brussels sprouts roughly choppped |
half of a red pepper, diced |
1 lemon, juiced |
Pinch of salt and pepper to taste |
Instructions:
1 | Heat a large skillet with the butter at medium heat. |
2 | Add Brussels sprouts, carrots, garlic, and red pepper. Season and stir with a wooden spatula or spoon or 10 mins or more, until brussel sprouts soften and veggies are tender. |
3 | Add two eggs to fry on top of the brussel sprout hash, place a lid onto the skillet and let cook for 7-10 mins until egg is cooked over easy or to your liking. |
4 | Using a spatula, gently transfer the sprout hash and one egg each to two serving plates. Eat while hot. |
