Fresh Beet Salad

This salad is easy to toss together with any greens available. 


4 beets (sliced and then cut into matchsticks)
1 whole lemon juiced
2 tbsp. of olive oil
1 tsp. salt
Fresh ground black pepper to taste
Leaves of 3 sprigs of fresh thyme
2-4 cups of green salad leaves (spinach, arugula, mixed blend)
Optional: sliced cherry tomatoes


1Add beets, lemon, 1 tbsp. of olive oil, salt, black pepper, and thyme into a large covered bowl and allow to marinate for atleast 30 mins or longer.
2Add remaining ingredients and mix well. Serve cold.

Cook's Tips:

For a creamy kick, add a dollop of ricotta cheese, goat cheese or Greek yogurt.
