Fresh Beet Salad
This salad is easy to toss together with any greens available.
Ingredients:
4 beets (sliced and then cut into matchsticks) |
1 whole lemon juiced |
2 tbsp. of olive oil |
1 tsp. salt |
Fresh ground black pepper to taste |
Leaves of 3 sprigs of fresh thyme |
2-4 cups of green salad leaves (spinach, arugula, mixed blend) |
Optional: sliced cherry tomatoes |
Instructions:
1 | Add beets, lemon, 1 tbsp. of olive oil, salt, black pepper, and thyme into a large covered bowl and allow to marinate for atleast 30 mins or longer. |
2 | Add remaining ingredients and mix well. Serve cold. |
Cook's Tips:
For a creamy kick, add a dollop of ricotta cheese, goat cheese or Greek yogurt.
